Lew Pabon is a functional nutritionist, fitness programmer, Army veteran, educator, researcher, and lifelong student of the human person. Through Pabon Vitality, he delivers personalized functional nutrition and fitness programming designed to build resilience, optimize metabolic and neurological health, and help clients combat age-related decline and chronic conditions. His work is grounded in the conviction that the human person is an integrated unity of body, mind, and soul—care for one dimension inevitably strengthens the others.

My Path

His path began early with wrestling at age ten, where discipline and formation took root. He later coached youth wrestlers and MMA competitors before enlisting as an infantryman in the United States Army. During his four years of service, Lew continued training in grappling and mixed martial arts, winning the 2013 Fort Cavazos Combatives Tournament in his weight class. Military life deepened his appreciation for the virtues of perseverance, service, and holistic self-mastery.

After completing his service, Lew transitioned into education through the Troops to Teachers program. He pursued music education at Berklee College of Music, directing high school marching and jazz bands. These experiences revealed music’s remarkable power to shape attention, emotion, and community. His work performing professionally as a drummer with large worship bands and conferences further enriched his understanding of music’s influence while prompting deeper questions about authentic spiritual formation and enduring tradition. This curiosity naturally led him into the study of neuroscience, movement science, and the therapeutic potential of rhythm.

Research, Practice, & Specialized Care

Lew researched the use of rhythm and subliminal priming to address movement disorders, with particular focus on Parkinson’s disease and how structured auditory input can engage the auditory cortex to support motor control. He has worked extensively with individuals living with Parkinson’s disease, Alzheimer’s and dementia, diabetes, overweight conditions, and other chronic or geriatric challenges. As a trainer and nutritionist, he integrates targeted nutrition strategies, functional physical training, and cognitive exercises to promote strength, resilience, and long-term vitality. His goal is to help clients thrive amid neurological decline and age-related disease through evidence-based, compassionate care.

Personal Path & Ongoing Formation

In his own pursuit of physical excellence, Lew competed as a professional bodybuilder, earning his pro card in 2021. He retired from competitive bodybuilding in 2024 to embrace a more sustainable and values-aligned approach centered on functional training, rucking, and fight sports, including Brazilian Jiu-Jitsu. He continues to find inspiration in music, both performing and attending live jazz shows.

Through military service, athletic coaching, music, scientific inquiry, and dedicated work in health and longevity, Lew’s life reflects a continuous search for what is true, effective, and ordered toward human flourishing. He is currently in seminary at the Diocese of Chicago & Mid-America Pastoral School, deepening his formation within the Eastern Orthodox tradition to better accompany clients and patients with wisdom, clarity, and compassion
